Our Story
Woodfire smoke, dark timber, cellar memory, and country hospitality kept in its own quiet time since 1887.
The Pig & Whistle opened in 1887 as the Clare Morris Hotel, built by Maurice O'Connell and named for the Irish county he had left behind. It was a rest house first — for merchants working the mountain trails between Melbourne and the goldfields, and for the Irish settlers who wanted somewhere that sounded like home.
It became the East Trentham Hotel in 1950, and the Pig & Whistle sometime after 1960. Nobody wrote down which year, and nobody who could tell us is still here to ask. The name stuck the way good names do — sideways, by habit, without anyone deciding.
The sandstone is original. So is the timber framing, the open hearth, and the vaulted cellar beneath the main hall. What has changed is the kitchen: woodfire at the centre, a cellar built around cool-climate Victorian growers, and a menu that treats a country pub as somewhere worth cooking seriously.
A Journey Through the Decades
1887
The Hearth is Ignited. Maurice O'Connell opens the Clare Morris Hotel as a rest house for merchants working Victoria's mountain trails.
1950
A New Name. The house is renamed the East Trentham Hotel, and the front bar takes the shape it still holds today.
1960s
The Pig & Whistle. The name arrives sideways, by habit, and never leaves. No record survives of who chose it.
1998
Expanding the Stables & Cellar. The sandstone vault below the main hall becomes a private cellar dining room; the old carriage yard is replanted as the Stables Garden.
2011
The Kitchen Turns. A woodfired hearth is built at the centre of the kitchen and the menu shifts toward local growers and open flame.
2020
The Cellar Comes of Age. The cellar list is rebuilt around cool-climate Victorian producers, with the Macedon Ranges at its centre.
2026
Still Open Seven Days. The hearth is lit at eleven, same as it was in 1887.
What we hold to.
Fire first.
Every main passes over the hearth. It is the slowest way to cook and the only one that tastes like this room.
Close to the ranges.
Our growers are in the Macedon Ranges and the valleys around them. Short drives make better vegetables.
A pub, still.
The bar stays open to walk-ins, the dog is welcome, and nobody needs a reason to be here. Fine dining is what we do, not who we ask you to be.
The hearth is lit at eleven. Come when it suits you.
